This means, among other things, that you will see Vejle and the surrounding area on your plate during the summer period. At Haraldskær, the kitchen makes a virtue of using the region's fruits and vegetables when they are in season. Our skilled chefs take pride in selecting and preparing local ingredients and gathered herbs, every single day.

Our approach is spiced up with a good deal of green consideration: The food is made from scratch, and it is the seasons that dictate what we have on the menu. Our ingredients are almost primarily organic, and we prefer to pick our own herbs in the garden and wild herbs in the river valley.

We actively fight food waste on a daily basis and we try to act with respect for nature. It is part of the sustainable thought that drives us on a daily basis.

The restaurant on Haraldskær is located in the middle of a contrasting nature. Here, chefs can unleash their culinary skills in wetlands, forests, river valleys, lakes and much more. Therefore, it is also obvious to embrace the region's pantries, farmers and producers. We therefore also know our suppliers, and that gives us presence on the plate. We get, among other things, blueberries from Knud, Danish farm cheeses, chickens from Hopballe Mill, and so on and on.

In the restaurant at Haraldskær, we are therefore passionate about showing you the best that the Danish natural surroundings can offer. And it's no small thing.
