Gastronomic experiences in a class of their own


We fight every day to show that sustainable ambitions and consideration for nature do not mean deprivation and boring food on the plates. We believe that local, seasonal produce is a far greater luxury than imported and exotic vegetables and cuts ever become. That small, enthusiastic farmers and producers are worth supporting. That animal welfare leads to better products. That a focus on food waste makes us better craftsmen. That meaningful food tastes better.

We also understand that our domestic climate and traditions place some completely natural limitations on the supply of products, ingredients and raw materials. We buy locally whenever possible. Then Danish, then Northern European and European – exceptionally, we have to trade overseas.

We are enthusiastic and not fanatical. Therefore, of course, we have both coffee, chocolate and vanilla, even though it requires a long transport. But such ingredients only find their way into our kitchens when the product is 'indispensable' and without local alternatives.

We look forward to showing you the great diversity and high quality of Danish ingredients – in our six different parts of the country.

We want to see a significant reduction in the consumption of beef in hotels over the next few years. Part of it we handle by replacing the beef salami with a piece of cold cuts made from chicken or pork, or we replace the brunch sausage with beef with one made from pork.
But it also means that we have removed beef from all our conference menus and that over the next few years we will also remove beef from our banquet menus. But why is it so necessary and relevant?

And we know that raw materials that have been allowed to grow at their own pace and without pesticides are also the absolute best for nature. But we will not prioritize ecology at any price. We work daily with a thought of sustainability, and this means, among other things, that we do everything we can to avoid unnecessary imports of raw materials from afar. We always prioritize buying Danish and preferably local ingredients. Therefore, you will never find either exotic fruits or vegetables that are only grown far away from Denmark in our kitchens.
