We love organics!

And we know that raw materials that have been allowed to grow at their own pace and without pesticides are also the absolute best for nature. But we will not prioritize ecology at any price. We work daily with a thought of sustainability, and this means, among other things, that we do everything we can to avoid unnecessary imports of raw materials from afar.

Our Approach to Ecology

Therefore, we will never be able to deliver, for example, organic carrots from Spain, if one of our local producers is able to deliver a produced carrot variety produced with sustainable care, and which can be delivered without burdening the environment with a large amount of unnecessary CO2.

In addition, we always use fresh Danish fruits and berries from our local areas or our own gardens, and therefore you will not find any exotic ingredients or fruits that can only be delivered from afar in our range.

On the other hand, you can be absolutely sure that there is a good story hidden behind every little part of the dish you are served. We know exactly where it comes from and who has grown it.
We believe that this provides the best experience for you as a guest - while also being the best for nature.

The Organic Cuisine Label in silver

We are proud that back in 2013 we were the first Danish hotel chain to receive The Organic Cuisine Label in bronze, and that we are now the only one with the silver label.

The Organic Cuisine Label is a government certification and labelling scheme for eateries in Denmark, which is awarded and controlled by the Danish Veterinary and Food Administration. The label shows how much of the food and beverages purchased are organic and is available in three variants: Bronze (30-60%), silver (60-90%) and gold (90-100%).
