Havhøst is an organization that creates new blue industries along Denmark's coasts. A profession that learns from the mistakes of the past and that brings life back to the Danish ports - and the Danish waters - while at the same time growing new favorite dishes for the Danish dinner tables. In Denmark, there are more than 9000 km of coastline that has unfortunately been neglected.

In Denmark, there are a handful of brave people who have thrown themselves into establishing regenerative sea cultivation of seaweed, mussels and oysters, which we call sea harvesters.
This type of cultivation creates tasty, sustainable and healthy food while at the same time helping to restore balance to marine ecosystems. Sea harvesters work according to a common vision of giving more to the sea than they take. For the same reason, they are small-scale enterprises with strong roots in the local community.

When mussels, oysters and seaweed are grown on a small scale, there are a lot of advantages:

  • they absorb nutrients from the sea (of which there are far too many places)
  • they bind CO2
  • they create new underwater habitats for marine creatures
  • They are good nourishment for people and open up a world of edible experiences that are unknown to many.
  • They use very little space – so there is much more room for wild nature.
  • The cultivation helps to keep alive the many local port environments that are declining due to a lack of fishing and other port industries.
