You have to try things out a bit when you have high ambitions to take responsibility for the climate and the environment. Therefore, it was not far from thought to action when we came up with the idea of introducing one meat-free day a week in our restaurants. The problem was that when the guests heard about the new initiative, they just wanted a tender piece of meat: "I would like to ask for a good steak, please!"

Fortunately, we are constantly learning how we can contribute positively to the world we are a part of. And we learn a lot from our guests. In the example of the meat, the dilemma solved itself when we found out that it is better to offer alternatives than to impose bans. Now, more and more guests are opting for vegetarian menus – but only because our chefs love to work with seasonal local vegetables.
