The menu is put together with great care, and we find ingredients and inspiration in nature.
We take pride in putting together menus on nature's terms. This means, among other things, that we only use fruit and vegetables that are in season, and that we shop locally and organically.
But as much as we are concerned with nature, we are just as concerned with you. Therefore, our skilled staff is also ready to take into account any allergies or special dietary wishes. Lactose intolerance, gluten allergy, vegetarian or vegan we know that there are many different allergies and diets, and we want to take that into account. Therefore, please let us know about any reservations already when you book. Then the skilled chefs will tailor the food for you.

The ingredients are fresh, in season and preferably organic, and our chefs have a penchant for local products. We have the Organic Cuisine Label in silver - and we use organic products when we can. At Skarrildhus, we believe that we get the best ingredients when they are produced as naturally as possible. We therefore work daily from a thought of sustainability, which means that we steer clear of food waste and unnecessary import of exotic ingredients. This is your guarantee for a greener dining experience.
We are connected to the food and the surrounding nature, and therefore we shop locally. For us, it is natural to know where the ingredients come from and what makes them special. Therefore, it is some quite unique dishes that leave our kitchen: Here you are served Herning and the surrounding area on one plate.
In order to live out this principle , we are on a first-name basis with our suppliers. It provides a presence that you will be able to feel on the plate - whether you are a hotel guest, party invitee or conference participant. Here, Herning and the surrounding area are represented in the menu's wild mushrooms, the honey from its own hives, the herbs from the forest floor, the home-brewed beer, the fresh vegetables from the garden and the well-hung carvings from the neighboring farms.
For our chefs, the workplace is not limited to the four walls of the kitchen. Instead, they use the entire area – outside and inside – as this is where our distinctive characteristics and special qualities are to be found. The staff are thus frequent guests in the garden, in the forest, on the heath, in the stable and in the field, so we always have the best the area has to offer on the menu.
The same applies to you as a guest. Just as we would like to experience the area's rich nature, we think you should have the same opportunities. Therefore, you can always eat on the farm's cobblestones or among the garden's flowers and the forest's beech trees when the weather permits. During the winter months, we make sure that you can gather under a blanket in the courtyard around the crackling fire or behind the windows in the warm rooms of the former manor.
