Climate contribution for C02 beef-burdensome


At Sinatur Hotel & Konference, we are constantly focused on doing the best for nature. Many things we do behind the scenes, such as when we find the most gentle cleaning products, ensure meticulous waste sorting or shop at the local apple orchard.


In other cases, our work with responsible hotel management becomes more visible and tangible to our guests. This applies, among other things, when we talk about our gastronomic profile.


We want to see a significant reduction in the consumption of beef in hotels over the next few years. Part of it we handle by replacing the beef salami with a piece of cold cuts made from chicken or pork, or we replace the brunch sausage with beef with one made from pork. Not many of our guests experience this as a problem.

This also means that we have removed beef from all our conference menus and that over the next few years we will also remove beef from our party menus. But why is it so necessary and relevant? This is because beef has a large climate impact and emits a significantly higher share of CO2 than our other food purchases.
  • In 2022, we traded 337.4 tonnes of food at Sinatur with a total emission of CO2 of 1,294.4 tonnes. 
  • Of this, we bought 9 tons of beef, which emitted 488.4 tons of CO2 – 
  • This means that 38% of our total CO2 load from food purchases comes from beef, even though the share of beef only makes up 2.7% of our total food purchases.
We believe that this is quite simple to do something about. We have so much more delicious to offer, so no one will compromise on a good meal.

If you as a guest still want beef to be served at your conference, we will also find out - we do not believe that prohibition is the way forward, just information and a healthy talk about the possibilities. However, we would like you as a guest to take an active stance and know our position on beef, and therefore we ask you to pay a climate surcharge of DKK 25 per person if beef is to be added to the plate. We donate the climate supplement in full to the Danish Nature Fund, which invests the money in forests.
