25-year-old Mie Lambrecht is a waiter trainee at Storebælt Sinatur Hotel & Konference in Nyborg. She already started working as a waiter at her father's restaurant when she was 15 years old, and even though her father has advised against a career in the restaurant industry on several occasions, Mie Lambrecht cannot do without the pulse and work in the restaurant.
"I love the universe of the restaurant and the contact with the guests. A small smile and a good experience can make a huge difference for the guests and help turn a perhaps bad day into a good one. It gives a good feeling."
"They are really different and vary a lot from day to day. For example, I help arrange the food together with the chefs on the buffet, and of course I also serve at the tables. I present the food and the accompanying wines, and then I will help create a nice atmosphere in the restaurant so that the guests have a good experience.
The guests are very diverse. We have both conference guests and guests who are celebrating their silver wedding anniversary. A little while ago, we had a visit from 150 craftsmen for a Christmas party. It was fun to stand at the bar and serve drinks and cold Christmas beers."
"It's a great education where you learn a lot about food and wine. You will also learn how to give guests a good experience. The waiter education in Denmark is one of the most recognized in the world. So if you want an adventure abroad, many doors will open.
You may often hear that working hours are poor. I don't think it's bad. I'm not a morning person, and I enjoy meeting from 11 a.m. to 9 p.m. If you want to seek new career paths, an education as a waiter can open doors and qualify you for a job as a wine distributor, popularizer or be a good starting point for starting up your own wine bar."
"I really get to try out all my ideas. Even if some don't succeed, I'm allowed to do it again. Most recently, I have been responsible for creating a brand new cocktail menu that is more seasonal and adapted to the nature that embraces us. For example, we use both mint from the garden and sea buckthorn found in nature in our drinks. It's fun and great to be given responsibility by my boss and colleagues.
As a student at Sinatur, we get some wild experiences. For example, I have been to Falsled Kro, to Food Walk in Aarhus and drunk cocktails at St. Paul's Pharmacy in Aarhus. We are also visiting a lot of our suppliers in Denmark, and in April we were in France, where we experienced some of the best vineyards in the world. Every year we hold a Student Evening, where the students from all six hotels come together to create a gastronomic experience for the guests without interference from "the adults". It is a good and educational experience, where we have the opportunity to test ourselves when it really matters."
"I dream of becoming self-employed and opening my own cozy restaurant. After the waiter training, I will start training to be a chef, and I will also take the sommelier education, so I am best equipped to run a good and successful à la carte restaurant. It must be "fine dining" at prices where everyone can participate – including students. The food must be carried by organic and local ingredients, just like at Sinatur."
